I love spanakopita pastries so much. As a matter of fact, I can’t stop myself from picking up those little bits of goodness. Apart from its amazing taste, Spanakopita is very easy to make. With the help of the ingredients I’ve listed below, you can make your own tasty Spanakopita which is perfect to share to the rest of your family. See the whole process below:
Spanakopita Pastries Recipe
10 oz. of frozen thawed spinach (chopped)
1/2 cup of crumbled feta
1/4 cup of onion (minced)
1 tbsp. of olive oil
1 tsp. of dill (chopped)
1 tsp. of garlic (minced)
Salt and ground black pepper
2 fresh eggs
1 sheet frozen puff pastry, kept it chilled
1.) Get as much liquid from the thawed spinach through squeezing until dry.
2.) In a medium bowl, mix the following ingredients; spinach, crumbled feta, minced onion, olive oil, dill and garlic. Then season to taste with salt and pepper.
3.) Get a small bowl and beat 1 egg to blend then fold into spinach mixture.
4.) Cut the puff pastry into 9 equal squares and grease muffin tin. Put a square on every muffin cup, pressing its bottom and up sides leaving the corners pointing up then divide the filling among cups. Fold the pastry over filling which press the corners together so they would meet in center. Important: Assemble the spinach puffs 3 hours ahead, cover the puffs and chill.
5.) In a small bowl, beat the other egg and brush the pastry. Bake the pastry for about 25 minutes or until it turns golden brown. After that, transfer it to a wire rack and let it cool for 10 minutes.
6.) Run a small sharp knife around its edges so it would loosen then turn out puffs into rack to cool.
