Kiwi Yogurt Cake

Craving for a cake but you’re having diet plan? Well, don’t worry because you can try this Kiwi Yogurt Cake. I can’t promise that its low in sugar content, but with its powerful ingredients, i believe that you can still try it.

Kiwi Yogurt CakeI had a friend who love to eat kiwi in her diet food, I was wondering what would it help her in having her diet whit this and what are the benefits she can get from it.

After a research, I found out that kiwi is really a smart carb that will help the body keep fit and not responding of storing some fats; unlike other fruits that has high sugar contents. And since I love baking, in her birthday, I made her a cake, and she really like it because I just not made a simple cake but a Kiwi Yogurt Cake.

And for you guys who are conscious in their sugar intake too to maintain their body fit and thin, you can also try this Kiwi Yogurt Cake. And enjoy it while not minding the diet. This will really make you feel that it’s okay to have cake, but only this Kiwi Yogurt Cake. So, enjoy and have a great day ahead!

Ingredients:

  • 3 kiwi fruit
  • 1 lb. of plain low-fat yogurt
  • 1/2 cup of fresh strawberries
  • 1 orange peel (grated)
  • 1 lemon peel (grated)
  • 1 lemon (only the Juice)
  • 2 pieces of eggs
  • 1/2 cup of granulated sugar
  • 1 tbsp. of unflavored gelatin powder
  • 1/4 cup of water
  • 1/4 cup of Grand Marnier
  • 1 1/2 cups of fresh whipped cream
  • 1 sponge cake

Procedure:

  1. Cover the bottom of a 10-inch round spring form pan or any size of spring pan you have there, with wax paper.
  2. Decorate the bottom of the mold with kiwi slices, make sure your kiwi is unpeeled and it is ¼ inch and strawberry into halves.
  3. Mix the yogurt with the strawberries, grated orange and lemon peels, and lemon juice until becomes very creamy.
  4. And then, beat together the eggs and the granulated sugar in a separate bowl until becomes very foamy.
  5. Dissolve the gelatin in the water, and then add the Grand Marnier in a third bowl.
  6. In the first and second bowls, combine the ingredients and then add the whipped cream.
  7. Next, fold the third bowl of ingredients gently into the mixture.
  8. And then, immediately fill the mold to half an inch from the top and cover the mixture with a layer 1/2 inch thick of sponge cake.

And for the last step I this procedure, refrigerate it for an overnight.

For the Garnish

  • 1 tbsp. of unflavored gelatin powder dissolved in 1 cup of water
  • 1 1/2 cups of fresh whipped cream
  • 8 fresh strawberries (halved)
  • 1 cup of toasted (sliced almonds)

Procedure:

  1. Unmold the cake.
  2. The kiwi should be on top.
  3. To glaze top of cake with gelatin mixture use a light pastry brush.
  4. Decorate the top of the cake with whipped cream on each slice of the kiwi fruit and top with a half strawberry.
  5. Lay it toasted with sliced almonds around the base of the cake.
  6. And then, cut the cake into 16 slices or desired slices you may like.
