I was introduced to Andes Mints at a very young age. Though, my strongest memory was not of eating them, it was of being attacked by them.
My family commonly went to a little Mexican restaurant in town, and when we finished eating we would get these mints with the check. My two older brothers would make a sort of blow dart from the wrapper, and choose their target. Me.

The idea for these came from a nice big box of goodies that Wilton sent me. Inside was a book all about cupcakes and other fun things like colorful batter mix-ins and candy sprinkles. I thought the green “batter bits” with rainbow frosting would make a great St. Paddy’s day treat. But heck! They turned out so cheery, I’d make them anytime someone needed an infusion of sugary happiness. Talk about a pick-me-up!

I was at the Golden Arches the other day and guess what they have SHAMROCK SHAKES!! Yes they are here for a limited time!! Everyone loves them so I thought I would make a Shamrock Shake Cupcake!! And yes they are easy to make because I start with a cake mix as usual and doctor it!!!
