Brazo de Mercedes Recipe

Brazo de Mercedes RecipeToday is Brazo de Mercedes Recipe day. And I’ll be sharing my recipe with you. This recipe by the way is my favorite ever since I was a kid and I still love it. My son loves it too, I guess like mother like son. ;)

Brazo de Mercedes Recipe

Here’s what you’ll need

10 Large Eggs, Separate the whites and yolks

3/4 Cup Granulated Sugar

14 Ounces Condensed Milk

1 Teaspoon Vanilla Extract

1/2 Teaspoon Cream Of Tartar

3 Tablespoons Confectioners’ Sugar

Meringue Procedure

1.) Preheat oven at 350°.

2.) Combine the egg whites and the ½ teaspoon cream of tartar. Beat using mixer until bubbly.

3.) Gradually add the 3 tablespoons of confectioners’ sugar while mixing until you will reach the soft peak stage.

4.) In a cookie sheet or baking tray, place in some waxed paper on top of the tray and grease. Transfer the meringue and spread evenly using a spatula to make easier and faster.

5.) Bake meringue for about 20 minutes or until the color of the top part turns medium brown.

Custard Filling Procedure

1.)  While baking the meringue, you can now the cook the custard filling. Beat the egg yolks using a whisk and whisk well.

2.) Place egg yolks in a pot, and add in the 14 ounces of condensed milk. Combine well and turn heat to medium. Stir ingredients well, cook until mixture is thick; add in the 1 teaspoon of vanilla extract.

3.) Make sure that you have mix the ingredients well and turn off heat. Set aside and allow to cool.

4.) Remove the meringue from oven> you will notice that it will look a little bloated, allow this to cool for a bit in order to form to its normal size.

5.) Once already cooled down, sprinkle confectioners’ sugar on top of the meringue. Distribute evenly.

6.) Top with another wax paper and get similar size pan to cover before you flip it over.

7.) Once meringue is flip over, spread custard filling on top evenly.

8.) You can now then begin to roll.  Slowly roll the meringue and place in a long dish.

Chill then then serve your yummy Brazo de Mercedes.
