What’s with this Blueberry Buckle Coffeecake recipe?  Well the best answer that I could give you is aside from having a good taste, it is also perfect to prepare in any occasions, especially summer! Blueberry Buckle Coffeecake

Ingredients:

  • 2 1/2 tsp. of baking powder
  • 1/4 cup of shortening
  • 2 cups of all-purpose flour
  • 3/4 cup of granulated sugar
  • 3/4 cup of milk
  • 3/4 tsp. of salt
  • 1 piece of egg
  • 2 cups of fresh blueberries (frozen/thawed blueberries can be used if you don’t have fresh blueberries)
  • Crumb the topping  (recipe below)
  • Glaze recipe (below)

Procedure:

  1. Heat the oven for 375 degrees F. while greasing a 9-inch round pan or 9-inch square pan you can also use another square or inch of pan that you have.
  2. In large bowl mix the flour and then followed with sugar, shortening, milk, baking powder, salt and the egg.
  3. And then, beat for about 30 seconds or a minute with spoon and then carefully stir in the blueberries.
  4. Spread the batter in the pan.
  5. And then, sprinkle it with crumb topping and bake for about 45 to 50 minutes or until the wooden pick or knife inserted in center comes out clean.
  6. And then, drizzle with Glaze and serve warm.

Blueberry Buckle Coffeecake RecipeFor the Crumb Topping ingredients:

  • 1/2 cup of granulated sugar
  • 1/3 cup of all purpose flour
  • 1/2 tsp. of ground cinnamon
  • 1/4 cup of margarine or butter (softened)

Procedure:

  1. Mix all the ingredients until becomes crumbly and then sprinkle over the batter.

For the Glaze ingridents:

  • 1/2 cup of powdered sugar
  • 1/4 tsp. of  vanilla extract
  • 1-2 tsp. of milk

Procedure:

  1. Mix all ingredients until smooth. Drizzle over warm cake.
